Italian Chicken Skillet

This one is super easy and was created by simply figuring out what I had on hand!  It's probably been done in many a kitchen before :)

The Cast:
Chicken Breasts
Fresh Spinach
Garlic clove
Yellow Onion
1 can Italian diced tomatoes
a little garlic salt
a little bit of crushed Red Pepper flakes
Spaghetti Squash

FYI- Usually creating your own tomato sauce (post to come!) can help cut down sodium.  But, sometimes (and only sometimes ;) on a Wednesday night you don't care thaaaat much about sodium.

Directions: Combine Chicken, diced tomatoes, half a yellow onion slices, 1 clove garlic chopped or minced, some red pepper flakes/garlic salt to taste in a stovetop pan.  Over medium heat cook chicken until mostly cooked through, add the spinach in and watch it wilt away.  I usually cook the chicken about 20-25 minutes flipping the chicken occasionally and stirring up the sauce.

Serve with Roasted Spaghetti Squash.  Here is the SIMPLEST Spaghetti, fool-proof, method I have found. It's from Martha- so you know it's good.

Done and done.
