shop therapy

I think I had a Tuesday-night-pick-me-up....

How do we feel about adding these to the collection?

Maybe I will treat myself to a pair tomorrow!


Oh my.  This week is tiring!  I'm feeling physically, mentally and emotionally exhausted. Only Tuesday night?

Pregnancy caught up with me (hello third trimester!), this week marked the change into Semester 2 at school which makes the office unmanageably busy and I've been trying to juggle my time between work, baby, home and visiting my dad at the hospital.  (He had major knee reconstructive surgery last Thursday- a couple of roadblocks along the way has made his stay longer than originally anticipated...but we hope he will be out in the next few days!)

All I want is some cuddle time and sleep time- but even that is running short this week! Jud is busy helping his parents move into a new (and amaaazing) house during the evenings.  They do so much for us I guess I can't complain when they need our help every now and again :)

So for the time being, I am just setting my sights on making it through this week.  I hope to reward myself with something grand this weekend.  Im not sure what it will be- but it will be relaxing and amazing AND fun! Suggestions for fun events/places to visit in the Greater Tampa Bay area are welcomed!

Sunday Blues

Happy Sunday!

Let me start of by saying that I am usually in a great mood at 8 am on Sunday and start to feel the Sunday blues settling in  by noon or 1.  Do you know that feeling?  The one where Monday is just around the corner and the weekends are so painfully quick? It puts me in a little bit of a sour mood.  It doesn't help any when it's football season- The entire afternoon is gone in a blink!

Now, I enjoy my job and the Monday dread really is all about the anticipation.  Once I am at work the week usually goes by so quickly:  busy at work, busy at home, busy with Jamin...and then before I know it, it's Friday again!  I firmly believe sometimes that you can find me in my very best mood while I am pulling out of the work parking lot on a Friday afternoons.  I actually think this [pitiful] thought every Friday (despite how much I try NOT to live for the weekends), "OK Krysta, savor this feeling.  This is the exact moment when you don't have to come back to work for the longest period of time all weekend!"  Wow, what a great feeling! (I know, I'm working on it.)

I think I need to do something on Sunday's to brighten the mood.  Unfortunately all my grand plans involve gratuitous amounts of money: "shopping every Sunday!" "mini day trip every Sunday!" "new restaurant every Sunday!" "bake something new every Sunday!"   That last one is a little more of new pregnancy obsession.

What do you do on Sunday to make the arrival of Monday a little more tolerable?

Double Chocolate & PB cookies

I have caught the "bake from scratch" bug!

Yes, this is only my second time ever.

This could be very bad news seeing how I have currently replaced meals with cookies and consoled  myself by rationalizing that  "a few cookies count as a lunch!"

Welcome to the Double Chocolate & PB cookie recipe.  Enjoy!

1 1/2 cups flour, 1/2 cup cocoa  powder, 1/2 teaspoon salt, 3/4 teaspoon baking soda and mix it all up!

1 1/2 cups sugar, 1/2 cup  [1 stick] soft butter and  a nice big spoonful of PB!

Mix together and add in two eggs, and 1 teaspoon vanilla...keep on mixing and eventually it won't be as clumpy...

It will actually start to resemble cookie dough! Can you even believe it??

Mix egg mixture with flour mixture until smooth! Add whatever you'd like at this point, chocolate chips, mini reese's, nuts....I added chocolate, of course.

You know the drill from here...350 for 10 minutes!

SO, so good!

Makes a husband, and a pregnant lady, very happy.

weekend activities...

In the spirit of tonight being my "Friday" night here are the things I am looking forward to on this long weekend:

1.  Jud comes home from Miami tomorrow! Phew, that was a hard 24 hours on me & Jamin without him!

2.  Visiting the ol' daddy-o who is currently recovering from knee surgery.

3. Cheesecake factory on Saturday night with some lovely friends!

Can you tell I'm large and pregnant here? I sure can!

4. Hearing baby Owen updates at the Dr. tomorrow!

5. Planning our Babymoon to CHARLESTON! Woohoo!

at the beach


A ton of cheese...with some Penne

Penne with fire roasted tomato, roasted bell peppers, bacon & spinach (and a whole lotta cheese!)

Diced Roasted Peppers & Chopped Spinach

To the left, to the left- Fire Roasted tomato soup with milk being brought to a low bubble
To your right- melting butter (soon to be whisked with some flour and added to the soup to thicken)

Mix all together in a big bowl: sauce, veggies, and cooked penne

Three cheeses! Chopped provolone, 6 ounces ricotta, and shredded parmesean.

Assemble in casserole dish and start salivating over the amazing aroma of...


Top the casserole off with crumbled bacon, add a little more parmesean (why the heck not?) on top and bake for 30 min!


The dish had a good, subtle flavor.  However, I actually expected more of a tastebud explosion.  Next time I would make the tomato base sauce a little more flavorful with some more roasted peppers, red pepper flakes, or something. Husband and baby approved.

Baking Confessions

I have a confession.

It's a bad one.

I have never baked anything from scratch.  It's true.  I'm embarrassed, ashamed and depressed. It's hard to have a Martha Stewart complex yet have no idea what actually makes cookie dough, cheesecakes and brownies.

I decided, since its a new year and I'm pregnant, to remedy this situation!  I make my first purchase of unsweetened cocoa powder, ever.  I got my hands dirty.  Raw eggs were everywhere.  I may have checked my recipe 1,000 times.... but I did it!

Inspiration for my fresh-from-scratch Cheesecake Brownies, you ask?  Pinterest.  Of course!

And lets be honest here.  Pinterest didn't come up with the recipe- it was originally from Blissful Blog.  That selfish Pinterest is always trying to hog all the glory.

Here is the evolution of my HOMEMADE brownies:

First comes the flour, cocoa powder (this tasted DISGUSTING on its own, btw....and everyone knows that, except for me...the new baker.  That's a lie.  I did try this once on when I was young.  My older, and wiser, cousin has dared me to have a spoonful.  I agreed willingly, and learned a valuable lesson, which I remembered distinctly today) and salt.

Let's mix it on in with some melted chocolate chips/sugar/buttery goodness...

When it was all said and done, this recipe called for seven eggs.  Go ahead and let that sink in and hang on your hips for a bit..

There it is, brownies from scratch!  Onto the cheesecake...

Is ricotta and cream cheese actually part of normal cheesecake?  The cream cheese I can understand, but ricotta? I triple checked the recipe.  I was sure I was "pulling a Rachel" from F.R.I.E.N.D.S. when she messed up her fancy dessert by combining the ingredients from an English trifle and Shepherd's pie.

I did, it!  I have officially baked from scratch.  And it's soooo good!

Well, I tend to mention a lot of things on this blog that I am not quite an expert at [yet]: makeup, hair, learning my SLR camera, cooking...and now art!

On Tuesday, I went with my friend Carly to an alcohol ink painting class.  This is not a "drink alcohol as you paint" but actually painting with alcohol inks (although some sangria [and not being pregnant] may have added more creativity to my artistic side!).  It was way out of the ordinary for me a lot of fun!

This little flute man was the first I made...it was a terrible start, but I think I got better as I went!  Maybe.

My art is now proudly displayed in my office at work.  No one has asked me yet who made the beautiful pieces, but I know the admiration is coming!  Thank you for the wonderful Tuesday night date, All of My Reasons!
